Oh Thanks!

Happy Thanksgiving everybody! I’ve been up since 8:00, roasting, baking, rolling, chopping, mixing… here’s what I made:
-creamy butternut squash with vanilla & orange zest
-2 pumpkin pies made with pumpkins from our farm share and eggs from my chicken, Scramble
-honey-maple glazed roasted brussel sprouts & potatoes (with onion and garlic in there too)
-Baked leek and mushroom mini-quiches with truffle oil
-Sweet & spice toasted pumpkin seeds
This was my first pumpkin pie with my chicken’s eggs, the whites are SO THICK that I can’t believe it! It felt so thick while I was mixing everything together, and the pie was pretty much totally set within minutes of taking it out of the oven. Amazing. I love cooking, and I don’t mind doing it all day! I can’t wait for dinner over at dalas’ cousin’s house, I love spending Thanksgiving with them because they are the most kind, warm, loving family that I have ever met.
I’m thankful for all the usual things, but most of all I think I’m thankful that I was lucky enough to have two Thanksgivings this year! One in Canada last month, and now American Thanksgiving today. I am extremely lucky to have so many amazing people in my life, even if I don’t get to see half of them as often as I’d like. I am also thankful for everyone out there in internet land, for being the friendliest and most supportive crew that I haven’t met (yet!).
Oh, and I am definitely thankful for the fact that I just baked up a sheet of our extra pie dough so that I can crumble it into a dish of pumpkin ice cream. I also encourage everyone to do the same, because DAMN Y’ALL! That is one tasty treat.
